Downtown Evanston's newest spot, which opened Nov. 16, is the area's fourth installment of Colectivo Coffee. Colectivo launched in 1993 as Alterra Coffee. The company sources its beans from Colombia, Brazil, Sumatra, Ethiopia, Mexico and more, and roasts in Milwaukee on vintage, manually operated Probat roasters to create single-origin coffees and blends (blended after roasting). The cafe’s core is the coffee, but customers can also find Letterbox Fine Teas (Colectivo's house tea line), bakery items from Troubadour (another house line, baked off-site), sandwiches, all-day breakfast and Colectivo Keg Co. house beer on the menu. Also, Nitro Cold Brew is on tap.
